fruity fro-yo tarts
hi! wow!! one week later and another recipe to share… i’m… impressed? with myself…?
i don’t have much to preface with this (which is good because recipes that begin with the writer’s life story are the absolute worst), but i will say that i’m pretty proud of these. i had this specific craving and as soon as i could put my finger on it, i knew i struck personal genius (not to toot my own horn or anything like that…). it’s reminiscent of a smoothie bowl, but you can eat the bowl too.
i should also mention that i’m the worst at measuring… because i used my trusty tart shell recipe from delight fuel, you can trust those measurements! but as far as the fro-yo goes, please take the liberty to play around with it and make any substitutions based off of your own preferences!
ok, enough! without further ado!! let’s get into it!!!
how to make it!
preheat your oven to 360F
in a food processor, pulse your oats and almonds for a while, until they are chopped into smaller pieces and pretty well combined
add in your coconut oil and maple syrup, and process the mixture until it’s pretty consistent throughout and a moist dough-like texture is achieved
scoop approximately the same amount of “dough” into 12-18 muffin liners (i made 12)
press the mixture into each liner so that it moulds into the cup-like shape of the liner. don’t worry about it being perfect! (note that i have rubber liners, so it’s easy to pop them out at the end… you may have trouble with metal, but it may be worth trying! alternatively, you try could making this in a large 9” tart pan)
bake the shells in the oven for 10-15 minutes!
meanwhile, make your fro-yo. add each ingredient into your food processor and process until you reach your desired consistency (i like mine with a little bit of texture!)
scrape your fro-yo into a separate container, and keep in the freezer until you are ready to fill your shells
when the shells are starting to get golden around the edges and are firm to the touch, they’re done! take them out of the oven and let them cool for about 10 minutes. it’s a good time to do some dishes :)
when the shells feel cool enough, grab your fro-yo and fill each shell up! i put some zest on top of some for decoration, but it didn’t turn out so cute. so do what you want. (melted chocolate would be really good)
pop those bad boys into the freezer and wait a while longer for them to freeze… feel free to snack on any leftover fro-yo, or save it for later!
when they’re frozen through (probably after an hour or so), get those things outta your liners and right into your mouth!
what you’ll need!
for the tart shell
1 1/2 cup oats
1/2 cup almonds
5 tbsp coconut oil (melted)
2 tbsp maple syrup
for the fro-yo
1 cup frozen cherries (or any frozen fruit)
1/3 cup plain greek yogurt or skyr
juice of half an orange
juice of half a lemon (or orange, if you want it less tart)
2 tsp maple syrup
1 tsp vanilla
lemon and orange zest
a bit of salt
