simple banana pancakes
okay guys… this time around i’m hitting you with one of my most FAVOURITE go-to recipes that is a @chefskyefieri classic ;)
i make these banana pancakes probably once every two weeks - they’re a great breakfast for when you have just a biiiiit more time on your hands in the morning (although they still don’t take thaaaat long), AND they feel like a treat even though they’re actually quite nutritious!! it’s a win-win-win baby!
i love this recipe because in it’s simplest form, it is only two ingredients… however, what i love MOST about it is that it’s extremely versatile and there’s lots of room to play around! i make it different every. single. time. & always have fun experimenting with different elements to the batter and adding different toppings!
because of it’s very very versatile nature, this “recipe” is going to be written out a bit differently & there will be lots of pictures throughout of some of my favourite variations i’ve created so check the captions for those deats :)
now… without further ado, let’s get cookin!!
so, yes, as i mentioned before, there are only 2 ingredients for the basic batter… yes, TWO! and they are:
a banana
an egg
… that is ALL folks! i know, i know, it’s crazy… but it is true. and all you have to do is mash the banana and beat in the egg and it’s all set for cookin’.
now, as i said, you can play around here! i’m going to make a list of all the things i’ve made the batter with in addition to these, but i do want to make a special note that sometimes if your banana is too ripe, the batter will be too runny, so it’s a good idea to add in some flour!! all-purpose flour, almond flour, coconut flour, oat flour… you get the idea, anything works!!
here are some other elements you can add-in:
cinnamon
baking powder (to fluff it up a bit)
nut butter (of any kind)
collagen
protein powder
milk (of any sort - if it’s too thick)
cocoa powder
rolled oats
coconut flakes
frozen blueberries
chocolate chips
chia or flax seeds
lemon zest
the list goes on… the opportunities are endless folks
so, yes, once you’ve incorporated all of your batter ingredients, melt some coconut oil or butter on a large pan over medium-high heat (i usually go to about a 6 out of 9), pour your batter on, and cook the pancakes as you normally would! i do have to admit, my flipping succession rate with these is not high and i often end up breaking more than i’d like to admit… but they always taste great and that’s what really matters here.
now is the really fun part… toppings! i feel like most of these will be pretty obvious for you, but! lucky you, i’m adding in two bonus recipes below of my favourite toppings… you’re welcome ;)
maple syrup (duh)
nut butter (again, of any kind)
fresh or caramelized fruit
granola
coconut flakes
greek yogurt / chia pudding
jam / chia jam (recipe below)
nuts / trail mix
“salted caramel” tahini sauce (recipe below)
BONUS RECIPES!
chia jam:
add one cup of frozen berries to a small sauce pan over high heat. once the berries start to soften and the juices run, begin to mash them in the pan.
after they’ve become fully thawed out and are well-mashed, turn off the heat and stir in 1 tbsp. of chia seeds and 1 tbsp. of liquid sweetener of your choice (i like maple syrup best).
place a lid on your sauce pan, and remove it off the heat. allow the jam to congeal for about 10 mins and serve on top of those stellar pancakes! keep any extra in a jar in the fridge :)
“salted caramel” tahini sauce:
in a small bowl, combine about 2 tbsp. of tahini (can sub any other nut butter if you want), 0.5 - 1 tbsp of maple syrup (i really just eyeball it), 1-2 tbsp. of warm water, a few cracks of sea salt and (optional) a dash of cinnamon. give it a good little whisk, a good little taste & adjust to your liking! use tahini to thicken, syrup to sweeten, and water to make it more runny!
for the adventurous:
topped with “salted caramel” tahini sauce, coconut chia pudding & homemade granola
for the indulgent:
cinnamon pancakes topped with creamy salted pb, homemade granola, coconut flakes & chia seeds
for the classic:
blueberry pancakes topped with crunchy almond butter
for the indecisive:
L topped with homemade almond butter & strawberry chia jam;
R blueberry pancakes topped with tahini, maple drizzle & cinnamon. both batters used oat flour
for the extra-zesty:
blueberry-lemon pancakes, topped with fresh black berries, “salted caramel” tahini sauce & a dollop of plain skyr yogurt
